In our Kitchen we have this nice big oven that almost never gets used by our staff. It is used mostly for baking our desserts and when we do some made from scratch breads.
In the State of Wisconsin the food and safety inspectors have been cracking down on violations of persons cooking in kitchens that the state has not inspected. Many people with non-cooking day jobs have little home based side business for making wedding cakes and specialty baked goods. These are people who enjoy baking and want some extra cash. They can offer a specialty service that the local bakery can not or is cost prohibitive to the average customer.
With these crack downs that local chamber of commerce has asked any local business if some of these ladies can rent a kitchen for a few hours a week. For us it makes perfect sense. We have the space and a piece of equipment we are not using. What they are making will not be compete with our food. Some of their customer may come into my storefront to pick up their order. As such that means more people exposed to my environment and menu who may be converted into a customer.
We have already talk to the insurance man and the lawyer about issues with non-employees working in our kitchen. Those issues we should have a good cover on. But I am wondering about any other issues that may pop up. Any one ever rent their kitchen? Any one ever work in a kitchen that was also being rented to a 3rd party?
